We bought some good-but-cheap chocolate at CostCo; it came in 8 gram squares. Z and I peeled 56 of those. 56*8 = 448g, close enough to a pound. Melt that in the microwave or a double boiler. Be careful not to burn.
Temper in a half-cup of half-n-half, then slowly combine in another 2.5 cups. You're aiming for a smooth liquid ganache. Stir in sugar, salt, and cinnamon if you're using it.
Taste. It should taste like a rich, dark, melted chocolate ice cream. If you want a lighter milk chocolate, add all the rest of the half-n-half. Add more sugar until it's a little sweeter than you like it. (Cold removes sweetness.)
Refrigerate for a few hours, or store in the freezer for an hour or so.
Get your ice cream machine ready. Add the vanilla and/or liqueur (or brandy, an orange brandy would be nice) to the mix and put it in the machine.
