Carrot Cake

Original ingredients:

1 1/3 cup all-purpose flour
2/3 cup vegetable oil
3 large egg
1 1/2 peeled and finely grated cup carrot
1 cup walnuts, finely chopped
1 cup sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 freshly grated or ground teaspoon nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon salt

My change: I used about 2, maybe 2.5 cups of processor-grated carrots. I added 1 tsp sweet paprika and 1/2 tsp ground hot chili pepper.

350, 13x9 pan, about 30 minutes until a knife in the center comes out clean.

My frosting was:

4 cups powdered sugar
1 stick butter
6-8 tbsps rum
1 tbsp vanilla
1/4 tsp salt

Make fluffy.

I first misread the title as "Carrot COKE".

Now I'm hungry, though I'd have to hold the walnuts; can't eat those or pecans.

Usually I see a cream cheese frosting on carrot cakes instead of a buttercream, though.

I think you ought to think about changing professions. You like to cook, seem good at it and get to be creative.

The fact that you would need to start work at 4AM if you became a baker doesn't seem to mean much change considering the number of times you have had to fix something in the middle of the night in your present position.
