What are we hoping for? A lower-fat, high-flavor soft ice cream.

3 cups whole milk
3 egg yolks
3/4 cup sugar
1 tsp salt
1 tbsp vanilla paste

Vanilla paste? Elizabear found it at Trader Joe's. Vanilla extract and vanilla pod mashed up -- a combination that immediately screamed Ice Cream!

Heat 1 cup of milk to 170 degrees. Beat yolks with 1/4 cup sugar until light. Mix thoroughly with hot milk. Turn off the heat, let the residual heat carry it up to 180. Blend in the remaining milk, sugar, salt. Let cool. Add vanilla paste, pre-chill.

That's where we are now. This afternoon I'll run it through the machine, then freeze the result for dessert service.

Any resemblance to frozen creme anglaise will be intentional. Suddenly I want to fill eclairs with this...
