The restaurant was so avant-garde -- well, let me tell you about their amuse-bouche.

The waiter puts down a small silver tray with wooden handles. He tells you about the silver (mined by happy Bolivians in an ecological-sensitive manner) and the wood (sustainably-grown cedar). On the tray is a glass of water, a glass egg-timer, and a tiny metal dome, a two inch hemisphere. The waiter explains that you drink the water, turn over the egg-timer, and when it has finished dripping Hawaiian beach sand, you can pick up the dome and eat what you find underneath.

It is a cherry tomato. There is a meticulously folded handwritten note under the tomato. The tomato was grown in the restaurant's rooftop garden, and pulled from the stem ten minutes prior to the expiration of the timer.
