Mexican Chocolate -- i.e. chocolate with cinnamon.

Somebody is going to complain about it being too chocolatey.

I like chocolate dark -- 70% cocoa solids is about right. I am usually unmoved by even 'good' milk chocolate. The only Hershey's product that tastes appealing to me is Special Dark.

I like chocolate with mint, with cinnamon, with chili peppers, with coffee, with peanut butter, with orange, with cherries. I like mole sauces and Cincinnatti chili. Brownies are good. Fudge is good, if it's not too sweet. Chocolate goes well with alcohol. I like hot chocolate, made by melting good chocolate and whisking it into hot milk. Apple pie can use a handful of chocolate chips tossed in before baking.

Today's recipe is a French-style egg custard, half-and-half with Trader Joe's 70% chocolate and some extra cocoa powder, sugar, salt, vanilla, cinnamon.
