Ice cream

Eliz said, "Mexican Chocolate." The boys said "Chocolate's good... what was that one you made with all the spices?"

12 oz Trader Joe's 72% Dark Chocolate
3/4 cup sugar
1 qt half-and-half
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp Wicked Hot chili powder
a good shake of mace
1/8 tsp salt


Turn the chocolate into powder with the aid of a grating disk on a Cuisinart or similar. Mix in the dry ingredients. Put in a glass bowl in the microwave and sinter.

Warm the half-and-half in a pan until it feels warm but not hot to the finger. Rapidly stir in the chocolate mix until you have a nice smooth thick liquid. Turn off the heat.

Chill the mix as far as you can, then put it in your ice cream machine.
