Take many pieces of citrus fruit, and peel them. Find a flat cutting board and use a straight-edged knife to scrape down until you have largely eradicated the pith. Let it dry for an hour or two.

Get a small crock pot, and put in an awful lot of sugar. Three cups or so. Push the peels down into it, and add just enough water to cover. Mix a little. Put it on high, and when it gets to nearly boiling, turn it down to low. Leave it to simmer for three days.

The peels will be soft, sweet, ready to fall apart at a touch of a knife. The syrup left over will be dark, rich, complex, and suitable for a wide variety of uses. If you had a cake which was a little too dry, for instance...
