Apparently, coconut oil is quite good for you--lowers bad cholesterol and triglycerides, raises good cholesterol--and can be used instead of butter or shortening in baking things like pie crust, because it stays solid at room temperature.

(This is new nutrition news, because early studies showed that coconut oil was one of the worst oils for health. Turns out, all those early studies were done on hydrogenated coconut oil. That was before we learned about the ills of hydrogenation and trans fat.)
