Last night I converted 10 pounds of sweet potatoes into latkes. The value of an electric fryer is in the thermostat and the timer. After a few trials, I successfully turned out latkes that were both cooked and consistent. One of the earlier attempts was a spiky ball which I would like to see an Iron Chef produce as "sweet potato sea urchin" -- the exterior looked like a sea urchin, and the interior was sweet potato and onion paste, slightly orange. A good visual match, I think, though I've only seen sea urchins while living and have never been tempted to look inside.

This morning the house still smells pleasantly of latkes.

The interior of sea urchin (uni) is exactly as you describe, except that it has no texture to speak of - it is a smooth paste.

Yum, sweet potato latkes! I've never had that, but it sure sounds delicious.
