Elizabear has a preference for carrot cake. I like carrot cake, but the icing is traditionally cream cheese, which I hate.

I have just made my first carrot cake, based approximately on the Joy of Cooking recipe. The icing is rum-vanilla. I think it will go well with the spiciness of the carrot cake.

That sounds very good. Dan's favorite cake is carrot as well. We're both huge fans of the cream cheese though. Rum vanilla sounds like a winner though. Maybe some coconut:)

Eliz's mom likes to make a spice cake (carrot cake minus carrots, basically) with a broiled coconot frosting. Delicious!

I'm getting better at cakes, but I still have a terrible time with icings.

Yup. It's called 'white icing' and it's simple enough that I remember it: 4 cups of powdered sugar, 1 stick of butter, some salt, 6 tablespoons of liquid -- in this case, rum -- and a teaspoon of vanilla. Beat until fluffy.
