Dec. 28th, 2008 07:29 amLast night I converted 10 pounds of sweet potatoes into latkes. The value of an electric fryer is in the thermostat and the timer. After a few trials, I successfully turned out latkes that were both cooked and consistent. One of the earlier attempts was a spiky ball which I would like to see an Iron Chef produce as "sweet potato sea urchin" -- the exterior looked like a sea urchin, and the interior was sweet potato and onion paste, slightly orange. A good visual match, I think, though I've only seen sea urchins while living and have never been tempted to look inside.
This morning the house still smells pleasantly of latkes.
