Bagel making experiment #1

12 cups bread flour, 2 cups rye, 1 cup whole wheat
3 cups water
yeast
charnushka
fried garlic
molasses
rolled into ropes, then joined
boiled in half a gallon of water with a fair quantity of baking powder in (couldn't find baking soda, hoped for alkalinization)
baked at 375F for 35 minutes; sheet pan sprayed then floured.
Thoughts:
the flavor is good. The crust is very good. The texture is not quite chewy enough -- need to work the gluten more.
Mom suggests balling the dough and puncturing with a thumb and rolling into a ring, rather than joining the rope. Good idea.
Topped with:
fried garlic, black sesame, white sesame, poppy, salt
