Chocolate Ice Cream FTW
Aug. 24th, 2008 09:36 pmMake ganache. Temper some into 3 egg yolks previously beaten with sugar. Heat appropriately. Stir in half and half, cocoa, more sugar, a small amount of strong coffee. Cook until no raw cocoa taste is present. Cool. Refrigerate overnight. Put through ice cream machine; decant immediately and freeze in airtight container.
